Chicken Nanban is a chicken dish coated in flour and egg, fried, and then rested in a pan with the sweet and sour sauce to absorb extra flavour. It is said to be inspired by “nanbanzuke” (vinegar-marinated fried fish), with the crispy, deep-fried pieces of chicken tossed quickly in a tangy, salty sauce. Chicken Nanban Sauce is the popular “Sweet & Sour sauce” in Japan for around 300 years, originally from Spanish “Escabeche”. It is best match with battered or breaded and deep fried dishes.
